Cheesy Egg White Scramble with Potatoes & Ham – Under 200 Calories
A super easy, delicious, healthy and protein packed scramble that is under 200 calories!

9 T Liquid Egg Whites (if you don't have egg whites in the carton, just use the whites from three eggs and reserve the yolks for later use) 1/3 cup Simply Potatoes Diced Potatoes 1 wedge Laughing Cow Cheese (I use the chive and onion, but you can use any flavor) 1 slice Ham, diced (I also will use Canadian Bacon when I have it on hand.) salt & pepper (to taste)
Place Simply Potatoes in a small microwave safe bowl with 2 T. water and cover with plastic wrap. Microwave on high for 2 minutes.
Heat skillet over medium heat and coat pan with non stick cooking spray.
Add potatoes and ham and cook until lightly browned.
Add egg whites and Laughing Cow cheese and cook gently stirring just until the egg whites begin to come together.
Remove from heat, season with salt, pepper and enjoy! (I like to add a little Sriracha to mine, but garnish to your liking.)
