Creamy Chicken & Wild Rice Soup

Man oh man is it COLD out!  Every morning when I turn on Good Morning America one of the first stories covered has to do with how much of the country is being bombarded with record breaking snow and freezing temperatures.  I live in Seattle and although we (thankfully!!!) have not been plagued with this type of winter storm, it is pretty chilly and nothing warms my soul like a comforting pot of homemade soup.

The recipe I wanted to share today is super easy and so comforting.  It is a recipe for Creamy Chicken and Wild Rice Soup that I stumbled on years ago while perusing the internet for a yummy and easy chicken soup.  The original recipe can be found here, however I have made some changes over the years to make it a bit healthier and tastier, in my opinion. I love to start the soup with a healthy dose of veggies that I like to put in a food processor so that my boys will actually eat the soup and not question everything.  You will also notice that I have a bit of an odd flavoring addition which is noted as packets of Ramen flavoring.  I know – very weird, but I can’t explain how good that salt in those little packets make this soup!  I also like to use either corn starch or potato starch to help make this a gluten free soup and I substituted half and half for the cream in the original recipe as well.

Creamy Chicken and Wild Rice Soup
Ingredients
1 onion, roughly chopped
2 carrots, roughly chopped
2 stalks celery, roughly chopped
1 clove garlic
3 T. oil
3 T. corn starch or potato starch
4 c. chicken broth
2 c. water
1 package Rice a Roni Wild Rice Mix
2 packets Ramen Soup Mix (I prefer beef flavored for this recipe)
2 boneless, skinless chicken breasts, cooked and shredded
1-2 cups Half & Half

Directions
Over medium-high heat in a large stock pot warm 3 T. olive oil.

Place onions, carrots, celery and garlic into a food processor and pulse until all vegetables come to a very, fine chop.  Place vegetable mixture into soup pot and sauté until veggies are lightly golden, about 6-8 minutes.  Add starch (potato or corn) and cook for 2 minutes.

Add stock, water, rice mix and ramen packets to the pot and bring to a boil.  Once boiling, reduce to a simmer, cover pot and cook for 25 minutes over low heat.

After 25 minutes, add chicken breasts and half and half.  Warm for another ten minutes and serve.

Skinny Potato Soup (aka low-fat potato soup)

I am still on my kick of trying to eat a bit more clean and healthy.  I will say that I am feeling really good and I am sure that the additional fruits, veggies and reduction of refined sugar may have something to do with it. 🙂

So, I had a craving – a really, really big craving for potato soup.  Normally laden with butter, cream, cheese and all sorts of other fabulously rich items, I knew that my normal recipe was not going to be what I was looking for, however I had an idea…

I bought these giant and I mean giant potatoes from Costco.  One potato could easily serve 2-4 adults.  Don’t believe me – check it out:

Anyways, I decided to bake it, then scoop out the pulp and puree that with some chicken stock.   Sautee some onions ahead of time and add a few spices and it I have to say, that it is a pretty darn good alternative when you are trying to eat a little cleaner.  This could also easily be made into a vegetarian version by using veggie stock instead of chicken stock.  Of course I did top mine with some scallions, low-fat plain greek yogurt and some bacon – because you can’t have potato soup without it (in my humble opinion any ways. :))

No Guilt Potato Soup

Ingredients

  • 1 1/2 – 2 lbs baking potatoes, baked in the oven until soft (I baked my giant potato in a 400 degree oven for about 75 minutes)
  • 2 cups chicken stock
  • salt & pepper (to taste)
  • additional spices (I used a little garlic powder, onion powder & cayenne and just sprinkled it in until the soup tasted good to me
  • Garnishes – top with scallions, low-fat plain greek yogurt, bacon and/or cheese 
Directions
Set the burner to medium and gently bring the chicken stock to a simmer.  Scoop the flesh from the baked potatoes (leave out the skin) and bring to a simmer.  Once warm, I used my immersion blender to puree the soup.  If you don’t have one of these, I would puree the soup in a blender or food processor.

Once pureed, add salt, pepper and seasonings to taste.  Top with garnishes and enjoy this warm, delicious soup. 

*Calorie content is 180-200 calories per 1 cup serving.  This of course is dependent on how you choose to garnish your soup.
